The Flatbread Pizza Co. is back on track, scheduled to open at 5 p.m. Friday, Feb. 1 at 520 S. Main St. The restaurant will celebrate its ribbon cutting March 14 (originally scheduled for Feb. 28, but postponed).

On Jan. 30, owner Daniel Lewis didn”t think he could make the deadline because he hadn”t secured the necessary liquor license, so he posted:

“Too much to do still and get it dialed in,” Lewis posted on Flatbread Pizza Co.”s Facebook page. “Sorry if that messes up everyone”s plans. I need a beer now with all this stress (smiley face added).”

Apparently, the beer, his good-nature, or just plain luck intervened, because Thursday night, a mere 22 hours from the “no-go” post, he reposted, assuring people Flatbread Pizza Co. would indeed open at 5 p.m. Friday, Feb. 1.

Serving up artisan style, wood-fired pizza, the atmosphere smacks of mountain bike decor and Breckenridge pine beetle kill wood on the walls. It”s a place Breckenridge locals and tourists are sure to enjoy eating in rustic mountain style.

Flatbread Pizza Co.Owner Daniel Lewis is very excited to open the restaurant, which started with his successful wood-fired pizza catering business. After moving to Breckenridge from Washington State in 2009, Lewis continued to pursue his passion for cooking with his mobile Flatbread Pizza Co. business.
A desire for a simpler lifestyle in a town with a sense of community brought him straight to Breckenridge. Participating in mountain bike and road bike races since college, he thoroughly enjoys alternating his time in the kitchen and on the road, as well. He loves pushing his physical limits and is frequently seen partaking in local bike races like Westy with Mav Sports, Firecracker 50, Breck Epic, Mountain States Cup and Vail Teva Games. Last year he placed third in “Expert Overall” in the Westy with Mav Sports Wednesday night series.
Off of his bike, you may have seen him around town serving up his pizzas at various local events like Oktoberfest, private parties and wedding dinner rehearsal casino online parties.

What makes this Breck eatery so unique? The owners” entire focus is on flatbread pizza. Everything from the specially crafted Forno Bravo wood-fired oven to only using seasoned apple and peach fruitwood from Colorado is geared to enhance the pizzas” flavor. The intense heat that the pizza is baked in, combined with the slower burning process and mouth-watering aroma from the fruitwood keeps customers coming back for seconds.

Daniel and his wife, Audra, strive for excellence, using only the freshest and highest quality natural ingredients and buying Colorado grown whenever possible. The super-thin artisan crust bakes to create a slightly brown, charred bottom side and slightly chewy inside.

Take-out and dine-in options are provided at Flatbread Pizza Co. In addition to the full authentic flatbread pizza menu, you can expect salads, starters and desserts. The pizzas are approximately 12” pies that serve one to two people. With pies ranging in names from the “Breck Bomber” to the “Wellington Garden,” you can’t go wrong. They also offer a selection of beer and wine to make your visit that much more enjoyable.
